We've had unusually lovely weather the last week here in Edinburgh. Normally during March it would be pretty darn cold and possibly snowy. But we've had an usually mild winter, and this wee heat spell (it was 23C one day!!) made spending our afternoons outdoors so lovely! I only wish we could enjoy this year round. The forecast is now calling for snow... SNOW in a few days. Hopefully it's wrong. We've got all of our fingers AND toes crossed.

1. I'm desperate for these Quetzalli 3 hoop plugs. Probably some of the nicest jewelry I've yet seen for stretched earlobes. 2. This red dress from ModCloth is perfect! PERFECT! I am going to Bath in April and I desperately wish I owned it for that occasion. 3. We are also moving in April, AHHH! Vacation and moving in the same month? It's going to be crazy. But this plate from anthro is gorgeous, and I'd love to have it in the new flat. 4. Barry M's hologram hexograms, most perfect nail polish ever? quite possibly. and, it's vegan too!

Well, I'm not sure I've made many improvements during the last week, but here are a few of Lani's lunches. Any suggestions to spice up our afternoons?
Soya hotdog, toasted pita bread with plain hummus, green beans, sliced pears and a sippy cup of soy milk.
Soya hotdog, a few bits of cheddar cheese (which she refused to eat, my little vegan :), sliced grapes, and avocado.
veggie burger with some ketchup, toasted pita and hummus, sliced cucumber, and pear.

17 months!

It feels this way every month, but time sure does fly by. And seeing as this post is late, Lani is nearly at the 18 month mark already! Though to be perfectly honest I've felt like I have a 2 year old for some months now. She is just growing in leaps and bounds, both physically and mentally.She's tall for her age, I think. She's taller than many of her two year old friends. Right now she's got a vocabulary of around 75 words, possible more and her coolest "trick" is counting to 10. She eats like a champ, runs everywhere, chatters nonstop and just lights up our entire lives. The only downside is she's started tantruming like a 2 year old. It can be a little comical sometimes. She loves the outdoors, too... and with the weather starting to look less bleak we are really looking forward to spending as much time outside as possible. That or at the museum. She loves going there, especially because this child loves animals. Everywhere we go she's shouting "doggy!", "cat!", "birdie!", "fishy!" whenever she spots them. So cute and so funny. Can't wait to see what the coming months bring!

New EcoJoia dolphin hoody. 25% of proceeds benefit Ric O'Barry's dolphin project campaign. I own the love sharks hoody and they are sooocomfy! 3. Mandarin espadrilles from office. At £10, it's hard not to buy these! 4. How awesome are these triangle nail rings? not sure if I'd have many opportunities to rock these, but they are uh-amazing.

I've been taking photos of Lani eating her lunch lately, mostly because I'm worried she isn't getting the variety that she needs. As a vegan, raising a vegetarian who I hope will be a future vegan as well, this is something I worry about often. I know I am giving her a really healthy start to life, but I want to make sure she's getting all the nutrients she needs. Here's a few lunches from last week. Maybe I should call these lazy lunches, because they are pretty lacklustre at the moment!

veggie burger with ketchup, sliced red grapes and green beans.

boiled pasta with vegan butter, sliced grapes, sliced cucumber and pink soya milk.

Grilled cheese sandwich with sliced cucumber. I ran out of veg that day, so she also had a wee snack after this.

I've decided it's my goal to spice up her lunches. I feel she eats a pretty rounded diet, but I am clearly the boring lunch lady!

It was ALMOST warmish in Edinburgh yesterday. We had to remove our coats indoors, and it was definitely pleasant enough to enjoy the outdoors. I had some errands to run in town, but after grabbing a quick starbucks we made the (some what trecherous, I tell you... it was a very steep walk, one hand on the stroller, the other on my cup!) trek down to Princes St Gardens. It was nice to let Lani run around in the lovely grass while I enjoyed my decaf, soya peppermint mocha! I'm already day-dreaming about the upcoming summer months!

Whenever I feel we are both starting to get Cabin Fever from the bad weather, and one more day inside might make us both go insane, we always head to our favorite place to waste away an afternoon: The newly renovated Museum of Scotland. But really, it isn't a waste. (Could visiting museum ever be considered a waste?!) It's great exercise for me chasing Lani around the massive museum (and I never tire of looking at all of the fascinating things) and it's physically and mentally stimulating for Lani.

Clearly, never too ashamed to take a photo of myself in the giant mirrors.

There's just so much to see and do there, and so many great things for Lani to get into. Basically, she spends about 2 and a half hours running amuck. Though she did take a wee moment to sit and watch a movie about the big bang and how our universe was formed. :)

The beautiful view we enjoyed on our walk to the bus stop. Edinburgh truly is lovey. Now if only the weather would cooperate more days than not!


Vegan Mini Puff Pastry Pizzas

Made these for dinner on Friday, and they were lovely! So simple to make and easy to do as Vegan or if you're a split family like we are, vegetarian too. Here's a quick recipe:

- package of Jus-Rol puff pastry
- jar of pizza sauce (just double check the ingredients are vegan)
- packet fresh basil, ripped
- handful of sliced mushrooms
- sliced onion
- sliced green olive

Roll out puff pastry (use a little flour so it doesn't stick) and make it pretty thin, otherwise it won't bake all the way through. Using a round or scalloped cookie cutter, cut out as many mini pizzas as you want. Place on cookie sheet. Spread on desired amount of pizza sauce. Add basil on top, then as many veggies as you want. Cook at 220C for about 15 minutes. It's best to just watch and see when it's ready. Enjoy!

My husband bought a little mozzarella and put that on his and really enjoyed this too. I'm sure it would also be really good with some melty cheese substitute, though I really enjoyed mine as they were.
